Insomnia Cookies is seeking a Paralegal / Legal Assistant who can juggle contracts, compliance, real estate, and related tasks with precision. You will work directly with the Director of Legal and Chief Legal Officer, handling document management, deadlines, and high-priority items across active matters. Ideal candidates bring 1–3 years of paralegal experience, an undergraduate degree, and strong organizational and communication skills to support investigations, employment matters, and policy
