Hot Side Butcher Production

Main Duties: Conduct butchering activities on the slaughter floor. Perform slaughter duties in a manner consistent with the company HACCP plan and ensure the well-being of animals and a safe and wholesome product for Paradise Locker Meats employees and customers. Prepare all USDA and company paperwork and facilities needed for slaughter operations Could include taking care of livestock, and stunning animals humanely Includes skinning of beef and lamb and scraping of hogs Could include washing and eviscerating carcasses efficiently. Could include split, trim, wash, sanitize and weigh all carcasses Trim, wash and sanitize all offal products Perform other miscellaneous duties on the slaughter floor Assist in other departments as needed

Work environment: While performing the duties of this job, the employee is exposed to: Extreme hot and cold temperatures, excessive moisture, strong odors, blood and raw meat products, loud noises, the slaughtering of live animals, fluctuating workload

On a daily basis livestock is processed, cut, packaged and shipped via truck and via Fed Ex. The day-to-day operations at PLM can be challenging and difficult as PLM customers include the most demanding and celebrated chefs. When the Friday truck leaves, everything must be perfect and accounted for. A drug test is required.
